Seventh Annual Faire la Fête Champagne & Sparkling Soirée and Class
Dec 31st 2025 6p - 9 p (This year it is a Wednesday evening)
Faire la Fête is a festive celebration held annually in Limoux, a town in the Languedoc region of southern France. The event commemorates the region’s rich history and tradition of producing sparkling wine, dating back to 1531 when fermentation in bottle was first recorded in Limoux... paying homage to the town’s heritage as the true inventors of sparkling wine. This predates the development of Champagne production by approximately half a century.
All Guests are requested to appear with Carnaval de Limoux-style masks at minimum (think Mardi Gras or Venetian), and full costume is encouraged but not necessary. Best mask wins a bottle of Champagne to celebrate at home. Best full Mardi Gras or Venetian style costume wins two bottles of Champagne to celebrate at home!

Sommelier, Steve Machajewski, is eight times recognized for his wine knowledge from the Wine & Spirit Educational Trust (WSET) Levels I, II, III; the Court of Master Sommeliers (CMS); the Wine Scholar Guild (WSG) as a French Wine Scholar (FWS), Italian Wine Scholar (IWS) and Spanish Wine Scholar (SWS). He just recently passed the Champagne Specialist from the Comite Champange.
Doors open at 6 pm.

Chocolate & Wine Pairing Pop-Ups
Master Chocolatier and Professional Sommelier Steve Machajewski is available if you would like to offer your Wine Tasting Room, Wine Club, Guests, or Private Get-Together Invitees a unique and fun experience. He will walk you through the steps of Wine and Chocolate pairing, how to pair, and explain what to think about when putting the two together. This can be a class event or an all-day pairing walk-around with a pop-up shop where chocolates are available for purchase.

Inside out: this place is charming, elegant, and full of class. It's a cozy store in a beautiful old building- decorated warmly. If you're looking for incredible chocolate, wine, or even dinner nights- you can't find better. While the prices are high, it's a little bite of luxury and they do have some incredible wines around $20 You can't beat the service. I didn't realize but I ran into one of the gentleman on a walk along the river and the morning and both fellows are sweet and wonderful. The hot chocolate if you make it right at home can chase the cold or sad out or anyone. Highly recommend stopping in and at least getting yourself a small treat!
